

Cranberry Honey Lemonade

This drink tastes like the summer of 2010. Picking rhubarb and berries in the garden, watching Thursday night movies at Clarenville Twin Cinemas, sitting on the steps of Dalfen’s Mall eating a $3 big slice, sun shining. 14 years later and now I have to pay for rent and start filing my taxes as soon as I’m done writing this page. The Drink still tastes like a little ball of sunshine though, so that’s something I guess. Probably also a good time to mention that this recipe mixes nicely with a high-quality gin or bourbon.

Ingredients

1 cup sugar

1 cup lemon juice

½ cup fresh cranberries

2 tbsp honey

6½ cup water
Directions
Combine 1 cup of water and 1 cup of sugar in a small to medium sized saucepan and bring to boil to create a simple syrup
Add the honey and fresh cranberries to the syrup and simmer for 10 minutes
In a 2qt or larger jug, combine the lemon juice and remaining water, then pour in the simple syrup mixture, using a strainer to remove any left over cranberry particles
Stir well and chill in a fridge for at least an hour or until you are ready to serve

NICK’S NOTES:
Don’t like cranberries? Try substituting with fresh rhubarb or red currants straight from your garden or local farmer’s market. If you don’t have access to fresh produce try using a frozen berry mix along with a splash of pure cranberry juice.
